Lentil Soup
Tasty, full of flavour // high in fibre & protein // quick to prepare // keeps you feeling full for a long time.
Ingredients
2 onions
3 cloves of garlic
A splash of olive oil
1 small tablespoon of red curry paste (tip: Blue Elephant is a tasty brand)
1 thin leek (optional)
1 or 2 red bell peppers
250 g red lentils (soaked overnight if using dried lentils)
Salt & pepper
2 stock cubes (chicken or vegetable)
1 can of coconut milk
Roasted cashew nuts
1 L water or more, depending on how thick you want the soup
Method
First, sauté the onion and garlic in some olive oil. Then add the curry paste and cook for a few minutes. Add the leek and sauté for a few more minutes.
Next, add the soaked lentils, bell pepper, salt & pepper, and stock cubes. Cover the pot with a lid and let it simmer over very low heat (add a little water if needed).
After about 15 minutes, add the litre of water and let it simmer gently for another 30 minutes.
Add the can of coconut milk and blend everything until smooth.
Delicious topped with some roasted cashew nuts. Enjoy!
