Marzipan Cookies
Absolutely delicious!
Super quick to make // so tasty // for the marzipan lovers among us // kids love making them // much healthier than store-bought cookies
Ingredients (makes 16 cookies)
250 g almond flour
100 g sugar
35 g seed mix of your choice
2 eggs
2 tbsp full-fat yogurt or quark (fromage blanc)
Pinch of vanilla powder
A few drops of almond extract (for that typical marzipan flavor)
A handful of dark chocolate chips (70%) – optional: add some shredded coconut
A splash of olive oil or avocado oil
Method
Preheat the oven to 170°C (340°F). Separate the eggs and beat the egg whites with a pinch of salt until stiff. Set aside.
Beat the egg yolks together with the sugar until light, pale, and fluffy (ribbon stage). Using a wooden spoon, gently stir the remaining ingredients into the yolk mixture.
Finally, carefully fold the egg whites into the almond batter.
Line a baking tray with parchment paper and use a tablespoon to shape about 16 round cookies. Bake for 12–15 minutes.
Allow to cool completely.
Et voilà, ready!
