Kombucha

Ingredients
- 1L water
- 5g green or black tea
- 50g raw cane sugar
- 100ml kombucha
- 1 scoby
Materials
- 1L glass swing-top bottle
- funnel
- cheesecloth or muslin
- 1.5L glass jar
- paper towel or kitchen paper
- rubber band
Method
Bring the water to a boil, remove from heat and let the tea steep for 5 minutes. Dissolve the sugar in the hot water and let it cool completely. Then add the 100ml of kombucha and the scoby, and cover with a paper towel. Place your jar in a dark, warm spot. After 7 to 14 days your kombucha is ready. Taste it carefully with a straw in the meantime to see if you like the flavour. Bottle your kombucha as soon as it's ready. This means: remove the scoby and keep 100ml of liquid. This is your 'starter kit' for your next batch of kombucha — store it in the fridge. Pour the remaining liquid through a funnel lined with cheesecloth into your swing-top bottle. You can leave the bottle out of the fridge for 1 to 2 days (with the cap closed) for extra fizz. Want to add extra flavour? Add herbs or fruit such as mango, lemon balm, ginger, raspberry or passion fruit. Taste and colour vary each time, so feel free to experiment! Pour your kombucha into a nice glass and you instantly have a showstopper at the aperitif table!
