Granola

A must-have for your pantry.

Delicious with a spoonful of full-fat yogurt & berries // high in fiber // endlessly versatile // super handy to have on hand.

Ingredients

300 g oats
100 g buckwheat groats
1 tsp cinnamon or speculaas spice mix (optional: ginger powder)
50 ml water
2 tbsp coconut oil
2 tbsp honey
A handful of chocolate chips (70% or higher)
2–3 tbsp cocoa powder
Mix of seeds, nuts, and kernels
Coconut flakes
Puffed quinoa

Method

Mix the oats, buckwheat, and spices together.
Heat a small pan over low heat and combine the water, coconut oil, and honey. Stir this mixture into the dry ingredients. Spread the mixture over two baking sheets lined with parchment paper.

Bake in a 130 °C (265 °F) oven for at least 1 hour, until everything is crispy and dry. Stir the granola occasionally.

Remove the granola from the oven and mix in the chocolate chips, cocoa powder, seeds, nuts, coconut flakes, and puffed quinoa. Et voilà – you have several weeks’ worth of granola!

PS: For extra fiber, variety, and protein, you can also bake 2 large grated carrots and cooked green lentils on a separate baking sheet. Mix these into the granola afterward.
