Chia jam

By Lore Vennix

A true must-have in your fridge. No added sugars, packed with fiber and omega-3.

The ideal way to get your daily portion of berries // ready in no time // delicious on a slice of bread, in a smoothie, or as a coulis with a brownie.

Ingredients

frozen or fresh fruit mix (blueberry, raspberry, cherry, strawberry,..)
chia seeds (about 1 tablespoon per 100 grams)
unsweetened vanilla powder

Method

Bring the fruit to a simmer in a small saucepan. Once it's all mushy, take the pan off the heat. Stir in the chia seeds, then add vanilla powder to taste. Add a splash of lemon juice to give it just a touch of tartness. Mix everything together well and pour it into a sealable glass jam jar. Put the jar in the fridge so the jam can cool and thicken. Enjoy!
