Cauliflower rice

A great substitute for white rice // lovely with some chicken, oven-roasted vegetables and a good old-fashioned curry sauce // endless variations with the vegetables you add // no fast carbohydrates // very nutritious.

Ingredients

1 shallot or small onion, finely chopped
knob of good butter
1 stalk of leek, finely chopped
1 large cauliflower
pepper & salt
nutmeg
optional: 1 can of white beans

Method

Heat a large pan and sauté the onion in a knob of good butter. After 5 to 10 minutes add the finely chopped leek and gently sauté. Meanwhile, add the raw cauliflower florets to a food processor and pulse until you have something that resembles rice. I never find the smell particularly pleasant, but don't worry — you won't taste it at all. Add the cauliflower rice to the pan along with the white beans. Season well with pepper, salt and nutmeg. Fry everything together for about ten minutes and voilà, it's that simple. Enjoy!
