Craving smoked salmon? This is the perfect vegan alternative!

Ideal vegan option for smoked salmon // surprisingly good // great on a little toast as an aperitif snack finished with some dill // lovely with cottage cheese on a seed cracker.

Ingredients

3 large carrots
2 tbsp extra virgin olive oil
2 tbsp liquid smoke (we're fans of the Lima brand)
1 tsp rice vinegar
glass dish

Method

Peel the carrots and use a vegetable peeler to make thin strips. Steam the strips for a few minutes (depending on how thin your strips are). The strips should no longer be al dente. TIP: a colander with a lid placed over a pot of boiling water works perfectly as a steamer.
Place the strips in a glass dish and pour the marinade over them. Mix well but gently. Cover and leave in the fridge for at least 24 hours.
